Local, Organic Bakery in Bend Expands with Full Breakfast and Lunch Menu in the Old Mill District
Updated July 2026
M’s Bakery, the much-anticipated bakery cafe owned by husband-and-wife duo Dario Muciño Trujillo and Macy Davis, celebrated its grand opening in the Old Mill District in March 2025. After a successful soft opening with a limited menu, the cafe is now unveiling its full selection as construction wraps up.
Nestled in the heart of the Old Mill District—across from Anthropologie and next to Avalon Salon & Spa—M’s Bakery specializes in naturally fermented breads made with organic flours and locally sourced ingredients. The bakery is open daily from 7 a.m. to 3 p.m.
“We bake fresh artisanal organic bread and pastries daily, along with a breakfast and lunch menu featuring items like an egg sandwich, huevos ahogados, sandwiches, soups, and salads” Macy Said
A Taste of Mexico in Bend
M’s Bakery plans to expand beyond its baked goods, offering a curated selection of chocolates, coffee, and wines from Mexico later this year.
“Sharing my Mexican heritage through food is something I’m incredibly passionate about,” Dario said. “We’re also excited to launch monthly baking workshops for adults and kids, bringing the community together through hands-on experiences.”
Born and raised in Mexico City, Dario earned his culinary degree in Querétaro before working in Toronto, Canada, and later at the Four Seasons Troon North in Scottsdale, Arizona—where he and Macy first met. The couple, along with their daughter Maya, moved to Bend in the winter of 2023, inspired by Oregon’s natural beauty and a shared dream of opening their own bakery.
A Space with Heart and History
The bakery’s design reflects the couple’s personal journey. Handmade tiles in the bathroom come from San Miguel de Allende, Mexico, where Macy and Dario were married in 2016. Artisan wool decor from a third-generation family of sheep farmers in Bernal, Mexico, adds warmth and authenticity to the space.
“Opening in the Old Mill District feels like stepping into the heart of Bend,” Macy said. “We designed this space with so much intention, inspired by our years of dreaming about ‘one day when we open a bakery.’ Now that day is here, and we can’t wait to share it with you!”
With everything made fresh daily on-site, customers will see the bakery team crafting bread and pastries throughout the day.
“Our staff is passionate about what they do, and we’re beyond grateful to have such an incredible team,” Macy added. “Come say hello—we’d love to meet you!”

Aloha to the M’s bakery “Ohana”
As a frequent traveler to Mexico in the 80’s in search of great waves, I was fortunate also to be able to experience the many flavors of the local cuisine. Looking forward to a cup of coffee and of course a pastry. “Good Luck”
