Celebrate Anthony’s Oyster Homecoming
Oysters are making their return to Anthony’s menus starting this week!
With the waters becoming cooler, Anthony’s is excited to bring back these fresh bivalves of Puget Sound! Bend’s premiere seafood restaurant will offer three half-shell oysters grown by small family-owned companies – Johnson & Gunstone (5th generation oyster growers) located in Discovery Bay and Wallin Oysters (3rd generation oyster growers) located in Little Skookum Inlet. Johnson & Gunstone grows Anthony’s exclusive rack & bag grown “Anthony’s Select” oyster. Anthony’s has worked with both of these families through multiple generations. Starting in October, Anthony’s will present local oysters shucked on the half-shell and in a number of other signature preparations as well as paired with their “oyster-friendly” local wines!

5th generation oyster farmers Johnston & Gunstone.
Fulton Creek, Hood Canal, WA – $3.5 each
With hints of cucumber, this meaty oyster has high
salinity with a shell reflects its beach grown environment
on Hood Canal.
Barron Point, Skookum Inlet, WA – $3 each
A meaty but small beach and bag grown oyster,
with sweet firm meat and medium salinity
If you prefer your oysters cooked, we are highlighting our other signature preparations such as Pan Fried Oysters, Crispy Oysters, Steak & Oysters or in casual locations, Oyster Tacos, Oyster Burgers and Oyster Caesar salad! Selections and preparations may vary based on location, please call ahead to confirm!
To round out your palette, indulge in our “Oyster Friendly” wines from family-owned Washington wineries. From L’Ecole 41 (Semillon) and Sparkman Cellars (“Pearl” Sauvignon Blanc) to Thurston Wolfe (Albarino) and more! Selections may vary by restaurant.
